Opinel carbon steel is an unalloyed, high-carbon steel that, following heat treatment, achieves excellent hardness, guaranteeing a perfect edge retention as well as great wear resistance and easy resharpening.
However, as carbon steel has low resistance to corrosion from moisture, it requires certain precautions: do not leave your knife in a damp environment or in the dishwasher, wipe the blade with an oily cloth after use, and oil it frequently along with its pivot joint.
